Fresh Basil Vinaigrette

This is a recipe I found years ago off the food show Everyday Italian.
I've made it many many times.  It's great on any summer salad.
 How could anyone not like fresh basil?  The smell, the taste, the Italian restaurantish-ness.



Fresh Basil Vinaigrette

In a blender, blend together:

1 bunch fresh basil (about 2 cups)
1/4 cup red wine vinegar
1 clove garlic
1 tsp Dijon mustard
1/2 tsp salt
1/2 tsp freshly ground pepper

With blender running, add:

3/4 c olive oil 


 
Enjoy!

This recipe is excellent!!! Try it as you can use it on more than just salad. Our boys use it like "ranch" and it is so much healthier. If they like healthy it has to be goooood!!! Now we make it regular and miss it if it is not made.
This is from Jo Martinez and Havie makes the dressing for us. Again...YUM.

Jo - What a good idea to use it for a veggie dip! I'll have to see if I can get that to work with my kids, considering how attached they are to Ranch dressing. :D
